And we’re back. With holidays and off kilter schedules, I assumed many people would have no need for a menu last week. We’re back with another menu that utilizes winter vegetables as often as possible. I’m working as fast as I can to incorporate a larger variety of side dishes that utilize what is in season. It’s a process. At least I can keep the side dishes varied within each week. I’m working on not repeating a side dish in a two week stretch, but that might take another week or two to complete.
Feel free to rearrange the menu to best fit your schedule. And look, there’s one night off to get rid of leftovers or to fill up with sandwiches, a quick breakfast dinner or something fun, like a night out. Whatever floats your budget or boat.

It’s simple, scrub, prick with a fork, and bake at 400°F for about an hour, until they give when gently squeezed. (Don’t squeeze hard, you’ll burn your hand)
