Chimay rounding out Charleston trip with dinner at Mercato

While you'll still have one more shot at a Chimay beer tasting, the last dinners in the Belgium's Trappist monks visit to Charleston are just around the corner.

On Tuesday, February 9, Wild Wing Café in Mount Pleasant is up, and on Wednesday, the 10th, the final dinner will be at Mercato in downtown Charleston.

Chef Eddie Moran is preparing a four-course dinner, each paired with a different beer from the Trappist Brewery. Representatives from Chimay will be in attendance to discuss the history, style, and components of not only the beers, but also the monks who make them. 

The courses:

Assagi (appetizer)

 

  • May River Oyster
  • Hazelnut-Beer "Foam"

1st Course

  • Veloute of "Old Chimay" Cheese
  • Belgian Endive, Crispy Speck and Apple
  • Chimay Triple Ale Draft

2nd Course "Land and Sea"

 

  • Chimay Beer Braised-Grilled Octopus and Berkshire Pork Belly
  • Crispy Fingerling Potatoes fried in Duck Fat;
  • Smoked Bacon-Braised Savoy Cabbage
  • Chimay Premiere (Red)

 

3rd Course

 

  • 48-Hour Short Ribs "Sous Vide"
  • "Olio Nouvo" crushed Yukon Gold Potatoes,
  • Horseradish Gremolata
  • Chimay Grande Reserve (Blue) 

 

4th Course

  • Chimay Artisan Cheese
  • Pecan-Raisin Bread, Traditional Accompaniments
  • Chimay Cinq Cents (White)
