Sheila Sheets, by day, serves as a records clerk at the local police department. At night, she designs character cakes, bakes assorted fork pleasing cakes and explores new cake flavor dimensions.

What was an endeavor to learn to make and decorate cakes for her grandchildren ten years ago has led to a passion for the craft.

Sheets offers a cake decorating class for all culinary skill levels as a two day series at the Technical College of the Lowcountry (TCL).

"Whether it’s to save money or to explore creativity, this class provides the foundation,” says Ms. Sheets. The class will cover the basic principles associated with cake decorating and includes:  baking cakes successfully, producing a cake that is level, making an assortment of icings and using pastry bag tips to create borders, flowers and general design elements.

Do it Yourself (DIY) cake decorating for some individuals is a motivation driven by economy. The purchase price for a character cake that feeds 12 people starts at $30 and proceeds upward toward $125 depending on the level of detail and difficulty of the design. For others, the art of cake baking and decorating has also been popularized by the do it yourself advocacy of several media outlets such as Taste of Home Magazine, Martha Stewart and the Food Network.

Cake Decorating Simplified will be offered at the Technical College of the Lowcountry's Beaufort campus on Thursday, June 23 6 to 8 p.m. and Saturday, June 25, from 9 a.m. to 1 p.m. The cost to attend this course is $75 per person.
