Try your hand at this tasty summer salad

I don't consider myself a chef, but I have been tooting my own horn about this new summer salad that I've been dishing out to friends and family lately. If you're looking to spice up a picnic, dinner party, or just impress your roommate with a fresh summertime dish, try this one out: the watermelon lime red onion avocado salad with cilantro.

It's cheap and easy to make, all you need are the following ingredients (all of which I purchased at The Vegetable Bin downtown for a cool $9.25):

  •  2 avocados, pitted peeled and cut into chunks
  • 1 lime
  • 1 red onion, chopped into small bits
  • 1 seedless watermelon, cut into 1 inch chunks
  • 1 tablespoon of extra virgin olive oil
  • 1 bunch of cilantro
  • Sea salt and pepper to taste

In a large bowl, toss in your cut up chunks of watermelon, avocado and onion and cover up the mix with the lime juice. Next, drizzle in the olive oil over everything before added cilantro, salt and pepper to taste. 

That's all there is to it! The colors, taste and freshness pop in this dish and I guarantee it will be a big hit whenever you decide to serve it up.
