About Chef Stephen Thompson

Chef Stephen Thompson

Chef Stephen Thompson

For Chef Stephen Thompson, the art of preparing food is more than just a job or even a passion, it’s a way of life.  Thompson has spent almost his entire life in the kitchen and this is where he feels the most at home.  “I don’t have any worries there,” he says.  “I just focus on what needs to be done.”

With a culinary degree from the Art Institute of Charleston and years of hands-on experience in a variety of different kitchens and atmospheres, he is excited to be the Executive Chef at Prohibition, where he has been able to really let his creativity shine.  Owners, James Walsh and John Teevan obviously know talent when they see it.  They did everyone a huge favor when they gave Thompson carte blanche to do whatever he felt inspired to do for their new menu.

Chef Joe DiMaio

Chef DiMaio and Chef Thompson enjoy a close relationship.  They were classmates at the Art Institute of Charleston and have supported one another as each worked his way through Charleston’s culinary ranks.  As the Executive Chef of Stars, Chef DiMaio now works just blocks away from Chef Thompson on bustling Upper King Street, and they frequently collaborate on menu ideas at their respective restaurants.    Chef DiMaio is known for innovation in the kitchen and, given his commitment to using fresh, locally sourced ingredients, he jumped at the opportunity to co-host one of the dinners in the Series.

Geechie Boy Farm

Geechie Boy Farm proprietors Greg and Betsy Johnsman returned to the Edisto Island family farm in 2003, growing a variety of vegetables.  In 2007 they acquired a 1945 gristmill and, after some trial and error, began producing grits and cornmeal.  Greg’s commitment to traditional milling techniques has been embraced by chefs across the Lowcountry and Geechie Boy products are now served in more than 40 restaurants around South Carolina and are shipped nationwide.
